HOLY TRINITY
In New Orleans and Cajun cooking, the holy trinity consists of onions, bell peppers, and celery. All good gumbo, jambalaya, or étouffée starts with the holy trinity.
San Fermin in Nueva Orleans pays homage to the world famous Encierro of Pamplona, Spain, a.k.a. The Running of the Bulls. Instead of bovines, the bulls are actually RollerBulls played by skaters selected from roller derby leagues around the world including New Orleans’ all-female flat-track derby team the Big Easy Rollergirls! And your participation in this fun event benefits the Beth’s Friends Forever and Big Easy Animal Rescue charities! There are also super fun events on the Friday before and Sunday after! Join the thousands of runners and hundreds RollerBulls as they bring their version of Pamplona’s Fiesta to New Orleans!
